Beet Feta carpaccio salad easy recipe is always a big hit on my table.
Healthy beets, drizzled with my Moroccan Beet vinaigrette is easy and delicious, quick, and a beautiful way to display a salad dish.
INGREDIENTS
3 large beets, cooked and skin peeled off
1/2 cup cherry tomatoes, cut in halves
1/4 cup Pecans or Walnuts
1/2 cup feta cheese, chopped
1/4 cup olive oil
1 1/2 tsp cumin
1/4 cup parsley, chopped
1/3 cup white vinegar
1/2 tsp each salt and white pepper
TO MAKE
Slice beets very thin Arrange in a circle, on a flat platter
Mix all other ingredients except the feta cheese
Roll feta cheese pieces into small balls
Arrange feta balls on beet pieces
Drizzle vinaigrette on all beet slices Serve chilled
