INGREDIENTS
Yields 60-70 small cookies.
For the dough:-
2+1/4 cup flour
1/2 tsp. salt
1/4 tsp. baking powder
2 Tbsp. butter or oil (I used olive oil)
1 cup of water
For the filling:-
6 Tbsp. vegetable oil
1 large onion, chopped, white or purple onion.
8.5oz. ground meat
1 tsp. Garam Masala mix (recipe in the spice mixes category)
1/2 tsp. dry ground ginger
1/2 tsp. chili flax or sweet paprika
2 Tbsp. lemon juice
4 Tbsp. chopped cilantro.
1/2 tsp each salt & pepper

TO MAKE
Add to a mixer olive oil or butter, water, flour & baking powder, mix well for about 5 minutes.
Dough should be very flexible and easy to work with, cover dough and let it rest while you work on the dough.
Add chopped onions to a pan, cook to brown a little,,
Add the meat to the onions and mix to brown the meat.
Add the spices and mix with the meat.
Add the lemon juice to the mixture.
Add the cilantro and mix well to blend.
Cook on low heat to help all the juices to evaporate, let cool completely….
This amount of dough usually gets me about 10 Samosas.
Divide the dough to 10 small batches and cover with a towel.
Start working with one batch, roll to open and make sure the size is about 3”x3”.
Scoop about 1 Tbsp of the filling and set it at the center of the dough.
Grab one corner of the dough and glue it to the corner on the other side to form a triangle or a half-moon shape, pinch both sides of the dough to glue the dough.
repeat with all other nine batches of dough.
Brush all Samosas with egg and sprinkle sesame (optional).
Bake at 350F (180) until golden brown.
Note: Samosa’s filling can vary, use imagination for different filling.
