Cheesecake- Israeli Style for Shavuot and Year Round

INGREDIENTS
For the dough-
2/3 cup flour
1 tsp. vanilla extract
pinch of salt
1/4 cup sugar
3/4 stick unsalted butter.
For the cheese filling-
2 cups philadelphia cream cheese
2 cups plain sour cream
1 cup sugar
1 tsp. vanilla extract
1 tsp. lemon zest
7 eggs separated
5 Tbsp. flour
1/4 cup corn starch
1 package vanilla pudding
1 cup milk
TO MAKE
Place all four ingredients in a mixer and mix for 5 minutes, wrap in clear plastic, refrigerate for 20 minutes.
Brush baking pan with butter or oil, spread the dough to cover the base of the baking pan. bake at 340F for 15 minutes.
Use a handheld mixer to mix all ingredients except the sugar and the egg white.
Mix egg whites with sugar to get a soft pick.
Fold in the egg whites with the cheese mixture.
Bake at 425F for 10 minutes, reduce heat to 335 & bake 1- 1 1/4 hour, let cool completely before serving.
