Chicken with Coconut, Thyme & mushrooms

INGREDIENTS 

Ingredients -

4 pieces of chicken breast

1 tsp. paprika

1 tsp. thyme

1/2 tsp. chilli flax

1/2 tsp. salt

1/3 cup corn starch

1/4 tsp. black pepper

5 Tbsp. olive oil

3 garlic cloves, minced

2 cups mushrooms

1/2 cup tomato sauce

2 cups fresh spinach

1 cup coconut cream

1/2 cup water

How to make

 Mix in a bowl- paprika, thyme, chilli flax salt, corn starch, pepper, mix well

coat the chicken breast with the corn starch mixture, transfer chicken pieces to a plate.

In a pan add the olive oil, cook chicken 2 minute on each side, transfer chicken to a plate

Add garlic to the same oil, add mushrooms, cook 5 minutes

Add tomato sauce, crea, water cook 2 minutes, add the spinach, cook 3 minutes, add chicken & cook abut 7 more minutes. serve this dosh with pasta, quinoa or fresh salad.

  Serve warm
